Despite contrary belief I don’t actually always eat Domino’s, I sometimes cook! I’m currently going through one of those phases in which I can actually be-bothered to make an effort in the kitchen, it happens occasionally. I made the most amazing meal last week and it was so easy I just had to share it with you!
The meal consists of chicken stuffed with Boursin cheese wrapped in parma ham, sweet potato chips and peppers, onions & cherry tomatoes cooked in red wine – mouth wateringly good!
For the chicken…
Two large chicken breasts
Garlic & Herb Boursin Cheese
Parma Ham (you can use bacon for a cheaper alternative)
Slit both of the chicken breasts and stuff with as much cheese as you like.
Wrap the chicken in your parma ham and cook per the packet instructions. I cooked mine for longer than the instructions stated as chicken scares me. I simply popped mine in the oven when I was ready to move on to the next task and left it in there until I was ready to serve.
For the chips…
Two sweet potatoes
Cayenne Chilli Pepper (or any herbs/spices you fancy)
Salt & pepper
Peel your sweet potatoes and then chop them into chips. Add to a food bag with olive oil, salt, pepper and the cayenne pepper. Shake the bag ensuring that all the chips have a good coating. Grease a baking tray with olive oil then add the chips onto the tray to cook for 25-30 minutes at gas mark 8, turning over half way through cooking. I cooked mine on the top shelf as the chicken was on the middle.
For the veg…
Heat some red wine in a frying pan. Chop one pepper and one onion and add to pan with as many cherry tomatoes as you desire.
Fry for a while until the veg is at your desired crispiness.
