I received Beetroots in my Veg Box the other week. Despite signing up to the Veg Box to encourage more healthy eating I decided to make a Beetroot & Chocolate cake – whoops. It was absolutely amazing and isn’t as bad as a normal chocolate cake, it may even be one of your five a day! It was also super easy to make.
You will need :
For the cake
175g plain flour
10g baking powder
75g cocoa powder
225g caster sugar
225g raw beetroot (roasted, peeled and chopped)
For the ganache
250g dark chocolate
250ml double cream
Pre-heat your oven to gas mark 6, grease a cake tin.
Sift flour, baking powder, cocoa powder and sugar into a bowl.
Blend eggs, beetroot and oil until smooth (I used a stick blender).
Fold the beetroot mixture into the dry ingredients. Bake for 40 minutes in the centre of the oven.
Pour the double cream into a saucepan and simmer gently until just before boiling point.
Break up your chocolate and put into a mixing bowl, pour the cream over the chocolate and gently mix until all the chocolate has melted and the mixture has blended. You have just made the most amazing chocolate icing EVER. Fact.
Once the cake has cooled cover it with lashes of ganache. If you’re like me don’t worry about presentation skills – the truth is in the tasting after all!
