Mushy Pea Curry, sounds horrid doesn’t it? Don’t be put off though as it is beautiful with the added bonus of being Syn free on Slimming World.
I used my new 12″ Green Earth Wok by Ozeri* to make my curry. The wok is so nice, especially in comparison to the cheapo IKEA woks that I usually buy! It has a ceramic non-stick coating which is incredibly smooth and easy to clean. It heats up quickly and has a lovely, lightweight handle which feels super sturdy. Being a funky green colour it also looks pretty awesome. The wok costs £36.95 and can be bought from amazon here.
To make the curry you will need :
- Four chicken breasts (cubed)
- One onion
- Two tins of mushy peas
- One tin of baked beans
- One tin of chopped tomatoes
- Medium curry powder (as required)
- Half a teaspoon of crushed chillies (optional)
Cook the chicken through with frylight.
Add onions, fry until browned.
Add the mushy peas, beans and tomatoes.
Add the curry powder, I added a tablespoon at this point and then added more to taste, and crushed chillies (optional).
Simmer for about twenty minutes.
I served mine with half and half – Slimming World chips and brown rice.
Some people are put off by the lumps in this, if they put you off just miss the chicken out and then blend to make a curry sauce, you can add any meat after blending.
