I’ve had another week of delicious, home cooked meals. I cooked quite a lot of Slimming World recipes this week, even the ones that aren’t Slimming World are pretty healthy.
Garlic & Herb Boursin topped Chicken with Roasted Leeks & Courgette
This was a simple and satisfying dish made to use up various fridge leftovers. I simply butterflied the chicken, crumbled the Boursin onto it and cooked in the oven along with leeks and courgettes in olive oil and diced garlic.
Slimming World Big Mac in a Bowl
You can read my recipe for this here, this is one of Spencer’s favourites, if I ask for his input in the weekly meal plan he will often request this. I would usually top this with cheese slices but I didn’t have any so I opted for a big dollop of Dairylea light instead.
This recipe came from my Everyday Easy One-Pot cookbook, I made this for lunches throughout the week. The Greek style dish combines olives, olive oil, lemon juice and feta cheese amongst other ingredients and is mouth watering-ly good! The downside to it is that it is messy to make, I assumed that a one pot recipe wouldn’t create much mess, but it did, I had to use several different dishes and bowls to make this which isn’t what I’d expected from one pot at all, but it was good so I would make it again,
Slimming World Garlic Chicken Lasagne
I followed this recipe for this dish, it wasn’t until I was serving it up that I realised I’d forgotten to prepare something to go with the meal! I quickly added some of the Quinoa dish that I had made for lunches and it went very nicely together. This was nice but if I was making it again I would do it differently, I would add some natural yoghurt or quark mixed with cheese in-between the pasta layers so that it was more lasagne like, I would also serve it with salad and Slimming World chips.
Slimming World Chicken Katsu Curry
I followed this recipe to make this dish, I found the recipe a little confusing to follow, it didn’t help that I was having a bad day, such a bad day that I dished up the entire meal for four people between the two of us, I did end up scraping half off each plate for lunch the following day when I realised my mistake! The recipe says to stir in the fromage frais (natural yoghurt in my case as I couldn’t get fat free fromage frais in my local Tesco) but I forgot to do this so dolloped it on top instead!
Hairy Dieters Spanish Style Chicken Bake
This recipe came from the Hairy Dieters cookbook, this was easy to make and tasted absolutely delicious, I’ve another two portions in the freezer which I am already looking forward to!
Lamb Tagine with Couscous
Another recipe from the one-pot cookbook, though I did go slightly off recipe with this and cook it in the slow cooker, I followed the basics of the recipe just cooked it in a different method. Another delicious dish, the addition of pita bread was a very good idea of mine too.
