Chocolate & Salted Caramel Cupcakes with Marks & Spencer
Marks & Spencer recently contacted me asking if I would like to bake some chocolate & salted caramel cupcakes using their fine ingredients*, including a Welsh product from the Tastes of the British Isles range, I of course jumped at the chance.

The cupcakes are very tasty, look impressive and are actually pretty easy to make. To make them you will need :

For the cakes :

50g extra-fine dark Swiss chocolate,

(broken up)

150g unsalted butter, softened

150g golden caster sugar
3 large free-range eggs
150g self-raising flour
75ml soured cream

For the topping :

40g dark chocolate

260g salted caramel sauce

Anglesey sea salt flakes, to decorate

Heat the oven to 180°C/fan 160°C/350°F/gas 4. 

Line a muffin tin with 12 paper muffin cases.

To make the cupcakes, gently melt the chocolate in a bowl, either over simmering water or in the microwave.

Beat together the butter and sugar until light and creamy. 

Add the eggs, one at a time, along with a spoonful of flour. 
Mix in the remaining flour, soured cream and melted chocolate, until combined.

Divide the mixture among the muffin cases and bake for 20-25 minutes, until risen and just firm to the touch. 

Remove from the tin and cool on a wire rack.

For the topping, melt the chocolate as before, then leave to cool for a couple of minutes. 

Spread a generous dollop of the salted caramel sauce over the top of each cupcake, then swirl with melted chocolate. 
Sprinkle with sea salt flakes. 
Leave for 30 minutes for the chocolate to set.

As mentioned above one of the products used in this recipe is a Welsh product from the Tastes of the British Isles Range. This particular product is the Anglesey sea salt flakes which were used to decorate the cakes and give them that extra delicious salty flavour. This salt is produced in Wales and supplied to M&S.
This product, and many more, will be the focus of the M&S stand at the Royal Welsh Show this year, which takes place between 20-23 July. The M&S stand will be showcasing produce from Wales and across the UK, as well as serving up delicious afternoon tea in aid of Breast Cancer Centre, Cardiff. 
There will also be a demonstration kitchen where chefs will show spectators how to create fantastic dishes using local produce. All of this along with activities and games for children should make the M&S stand a real family affair!
