Recipe : Low Syn Slimming World Cheesy Chicken Nuggets
Since re-joining Slimming World I have really been experimenting with my food, I love to come up with ways to turn something relatively high syn into a low syn, or preferably free, version, without compromising on taste. My latest experiment was to make low syn cheesy chicken nuggets, we really enjoyed them so it is only fair that I share the recipe.

Slimming World Cheesy Chicken Nuggets
To make two portions you will need :
1 large chicken breast
12 Laughing Cow Mini Cravings (6 syns)
1 egg
Smash for batter
Food processor
Pop the chicken breast & cheese cubes into your food processor and blend until smooth. Crack your egg into a bowl and beat, pour some Smash onto a small plate. Scoop nugget sized portions out of the processor, roll into a ball, dip in the egg and then coat in the Smash, flatten into a nugget shape. Place your nuggets into a frying pan sprayed with fry light, cook for around 20 minutes or until browned and cooked through, be sure to turn during cooking.
I served mine with baked beans and Slimming World chips, which is extremely naughty as I didn’t have my 1/3 plate of speed, but it was delicious!

    Interesting. Not sure what smash is (or syns for that matter) but I like the idea of the chicken breast and cheese beaten together to make a "dough" for the nuggets.

      Smash is a powder instant mash potato, I personally don't like it made into mash but it makes a great alternative to batter and is syn free on the diet I am following.
      Syns are naughty treats on the diet that I am following, I am allowed 15 a day and different foods have different syn values 🙂

    I've used smash for other things like Slimming World scotch eggs but never thought of using it as a batter for nuggest. These sound lovely, definitely must try them!
