Last week’s meals have been a hit so far, even with the baby (well, she enjoyed playing with them at least!). The lentils in the beef mince worked really well, you honestly wouldn’t have noticed they were there if you didn’t know.
The five days of meal plans worked out well, so I’ll be aiming to stick to that going forward. Our next five meals are :
Wrap pizzas – Aria can help make these. I’ve bought wraps, pizza sauce, cheese, ham, olives & peppers for these.
Mozzarella and tomato pasta bake with roasted vegetables. This is a nice simple meal as the pasta bake can all just be thrown into the pressure cooker (affiliate link) and ready in minutes. I’ve bought a tray of prepared roasting veg that just needs to go in the oven. Some call it lazy, some call it time saving!
Salmon & cream cheese stuffed potatoes with salad – bake your potatoes as normal, scoop the filling out, mash with tinned salmon & cream cheese, load back into skins and return to oven for a further twenty minutes.
Tacos – I’ve bought the sweet garlic & paprika taco kit for this.
Potato, onion & bacon hot pot (I’m using turkey rashers to be a little healthier), this will be served with broccoli, cauli & carrots – Layer sliced potatoes, bacon & onions in a casserole dish, top with a cheese sauce and bake.
For lunches I will be having leftovers, I’ve also bought baking potatoes to have with tuna, red onion & mayo. For Aria’s wraparound days she will have breadsticks, humus, tomatoes, carrots, cucumber, ham & yoghurt. In the house her and Carrie will have sandwiches/wraps/toast.
