I have been super intrigued by cauliflower pizza for a while now, a pizza with a base made of cauliflower, cheese & eggs must be vile surely? If something sounds like it shouldn’t work apparently really works I HAVE to try it, so try it I did, and enjoy it we did. It was super tasty and healthy. The best thing is that you can make this completely Syn free on Slimming World if you so wish.
For the base you will need :
1 cauliflower
2 eggs
A handful of cheese
Seasoning (I used garlic salt and mixed herbs)
For the topping you will need :
Tomato purée (you can use shop bought or make your own, both are syn free)
Your choice of perfect pizza toppings, note these will need to be cooked before adding to the base.
Pre-heat the oven to Gas Mark 7.
Grate the cauliflower so that it resembles rice, I did this in my food processor. Heat the cauliflower in the microwave on high for eight minutes.
Add a handful of cheese, the eggs and the seasoning and mix well. Don’t worry about letting the cauliflower cool before this step. I don’t have patience for that kind of thing.
If you want to make this Syn free you can count the cheese as a HexA, just make sure you weigh it out and leave for some the topping if you so wish.
Spray a baking tray with fry light and transfer the mixture onto it, compacting well.
Pop in the middle of the oven for twenty minutes. Flip the base over and pop back into the top of the oven for ten minutes.
I sliced mine into four pieces to make it easier to flip over.
Add your desired toppings and put in the top of the oven for a further five minutes.
You will be presented with a very healthy, very yummy pizza.
I choose Southern Fried Fridge Raiders and cheese for my toppings. The Fridge Raiders do have a Syn value but they were quick and convenient!
I made my own tomato puree simply by adding four quartered tomatoes to the food processor with a pinch of salt, minced garlic and mixed herbs and blending until smooth.
