Confession time, I’ve fallen off the wagon with meal planning. I always have a week or two of being super organised and on plan, and then a week or two of living in limbo with empty cupboards and eating far too many takeaways. Time to get back on it!
As well as my usual five weekly meals this week I’ve also planned a few snacks for Carrie, all of which are perfect for baby led weaning.
The baby led weaning snacks I have planned are :
Spinach & avocado pancakes – Blend 1 avocado, 3 cups of plain flower, ¼ cup of maple syrup, handful of spinach, 3 cups of milk, 2 tablespoons of baking powder. Once the mixture is smooth heat some oil in a frying pan and heat your pancakes a tablespoon at a time, turning over and cooking on both sides. This makes a huge amount of pancakes, perfect for freezing.
Porridge fingers – Equal amounts of porridge oats and milk of your choice (formula, breast, cows milk, oat milk, whichever you prefer!), mix together and add mashed banana (the amount of banana depends on how sweet you want them), mix together and then bake in the oven for 15 minutes at 190, cool, cut into fingers and serve. If batch cooking I tend to microwave for two minutes, cut into fingers and freeze, then cook in the oven for 10 minutes when I am ready to serve.
Our meals for the week are :
Creamy chicken with carrots – Mini chicken breasts, carrots, a small pot of double cream, two tablespoons of low fat crème fraîche, garlic, basil & paprika. Leave in the slow cooker on medium all day, serve on a bed of spinach.
Sausage pasta bake – I’m making a batch load of Jamie’s seven veg sauceand will use some for the sausage pasta bake which will also contain mozzarella, cheese, courgette, red onion and spinach.
Crispy Chicken Fajitas – I buy the kits for these for a quick, healthy meal.
Chicken Roast dinner.
Ham potato salad with hard boiled eggs.
For lunch I will have leftovers on some days and will also make bubble & squeak using leftover veg & potatoes from the roast dinner, I’ll eat this with leftover chicken and beetroot.
